    Saccharomyces cervisiae has an ability to ferment carbohydrate to form simple organic acid and release energy. The yeast cakes are prepared by pressing into cubes a large number of yeast cells together with starch which is an inert substance. The yeast cakes are used at home and in baking industry. Aspergillus species causes rot of figs and dates decay of tobacco and cigars. Aspergillus niger is utilised in the production of citric and other organic acids. Lactic acid is obtained by the activity of Lactobacillus over a variety of nutrient medium like hydrolysed corn or potato starch, molasses, sulphite liquor, etc. Streptobacillus injects by rat bites, more commonly in Asiatic countries. This disease is often called rat bite fever.
