                     Glycine max (Soybean) is the richest source of protein. It contains about 30-50% protein and 20% oil. It also contains iron, vitamins and is used as a supplementary food. Its seeds yield "Soybean milk", which is useful for infants and being leguminous it also adds the fertility of the soil. Rice has considerable high nutrient contents with about 90% carbohydrates 8-10% proteins, 1% fats and about 1% minerals. It is the most common food. The oil obtained from bran called ?Bran oil? is widely used in making soaps and cosmetics as an anti-carosine agent, lubricants as a rust resistant compounds. Due to high nutrient content, gram seeds are of great economic value. The seeds are grind to flour known as besan and is used in preparing various dishes. Its flour is also used by diabetic patient as a substitute for wheat flour. Its green leaves yield malic and oxalic acids. Wheat is the major cereal, which contains 68.4% starch, 12.5% water, 2.7% fibre and also contains mineral nutrients, especially potash and phosphoric acid and vitamin-B and E. Its flour is chiefly used for making bread and chapati. It is also employed in the preparation of beer, alcoholic beverages and alcohol.
